I love red lentils. They are so easy to cook, versatile, cheap and on top of that, healthy! Lentils are an excellent source of protein, dietary fibre and they are a great source of iron. Those are the facts, now let’s put them to use! Here are some ideas what to do with these lovely little fellas:

A lentil carrot soup, http://www.bbcgoodfood.com/recipes/2089/spiced-carrot-and-lentil-soup which makes a great meal in like 15 minutes. Serve it with some naan bread or roti if you like. Your own take on it: add some lime juice or sprinkle a bit of harissa on top for extra zing and to make it more summery.

And this one, which I just made for lunch. A yellow dahl with crunchy papads. I used my Indian cookbook but there are many versions of dahl so don’t be put off if you’re missing one or two ingredients, cooking is all about improvisation and you will feel even more content if you have given it your own swing 🙂
